Garlicky Zucchini Noodles with Chickpeas and Tomatoes

Thanks to the recent healthy eating trends (love it!), zucchini noodles have been making appearances on my Instagram and Facebook feeds. I love zucchini and we eat a boat load of pasta, so I was immediately intrigued when I came across a recipe for Garlicky Zucchini Noodles with Chickpeas and Tomatoes from Cooking Con Sal. I love garlic, zucchini, chickpeas, and tomatoes...so what could possibly go wrong?

Well, I did absolutely no research on how one actually makes zucchini noodles. Last night, we got all the ingredients out ready to make a healthy dinner...and BAM, discovered we do not have a julienne peeler, which apparently is used to make beautiful zucchini noodles. Awesome. Never fear...we improvised and it was surprisingly delicious. Enjoy!

Garlicky Zucchini Noodles with Chickpeas and Tomatoes

Ingredients


2 large zucchini (peeled using a julienne peeler...or whatevs!)
1 can chickpeas (drained and rinsed)
1 pint grape tomatoes (halved)
3 tablespoons extra virgin olive oil
2 cloves garlic (minced)
Juice of 1 lemon
Salt and Pepper to taste


Directions

Make the zucchini noodles using a julienne peeler.  Again, we discovered a little too late that we didn't have a julienne peeler. Which caused Chris to break out one of these...


 And then, we put our thinking caps on and grabbed a zester.


Which sort of worked...


So, after zesting/noodleing the two zucchinis, we tossed them in a bowl with the olive oil, minced garlic, lemon juice, tomatoes, chickpeas and salt/pepper.


Then, we placed in the fridge for 30 minutes to marinate. While this was happening, we talked about how this meal would never work...how strange it was going to taste...how we would never get full off of it...and then, it was time to take it out of the fridge.


We tossed a few more times and then prepped for serving.


To our surprise...it was delicious! Everything really mingled well while marinating. It was colorful, healthy, and really satisfying! I'll be saving this one for when I'm trying to get rid of baby weight for sure. I think it would be the perfect dish to make one evening, chill, and then eat for lunch the next day!

The true test of tastiness is little Miss Lillian Mae...and her verdict was...


Nope! She wouldn't even touch it! So, she was served a "plan B set of nachos", which she proceeded to tear up. Eh, that's life... On a side note, this is her new "cheese" face...so stinkin' adorable!
